Dude - you remember correctly. I have been slowly adding back in meat but I'm not quite sure how it's affecting me yet. I have to chew VERY VERY thoroughly to make sure my body can digest it. It took me about a half hour to chew most of a plate of meat tonight and I couldn't even finish. I bought myself a milligram scale to rebuild some tolerances to things very slowly. I'm going to do corn first since it's in basically everything (and I miss corn).
I'm delighted to hear that you're making some progress, even if it may be a bit slow. "Slow and steady wins the race," right? Along those lines, congratulations, too, on your success running and even breaking your own previous personal records!
As for chewing thoroughly, I've read and heard many times about
the benefits this can have. Purportedly, it's even better for us than we imagine. However, ever since the military, I tend to eat like a wild animal. Compounding the problem, I believe my stomach pH is still insufficient, though I've not had a Heidelberg test in a few years.
Anyway, I'm happy for your progress. May you continue to do well and keep improving.
