I have not been renting since I learned about mold illness, but this is an interesting and important thing to consider, Loski - thanks for bringing it up. I would say the following:
Prioritize plaster walls (basically rock dust, which doesn't support mold growth) instead of drywall (great food for mold).
Take a strong flashlight, and shine it parallel to the walls right up against them to see if things are growing.
Sniff and visually inspect under the kitchen sink and in the bathroom.
Check out the basement and avoid any place that's not bone dry down there.
Avoid basement units.
Ask for a short-term lease to start, if possible.
