Is dehydration the major problem I hear about? What about wine?

Friends and friends of friends who know I am having "the operation" next week, keep warning me to be careful about getting dehydrated.  If I drink juice or Gatorade with meals and have a glass or two of water between meals will that be sufficient?  Is alcohol completely out after the procedure, even a class of wine or beer with a meal?
 
I spoke with my surgeon last night by phone,  I told him again how much I wanted the J-Pouch hooked up in the first operation if possible.  He said he would try but would not compromise my health.  I am not having any problems now but he worries about narrow male pelvis issues and the fact I am a big guy, over 6' and 250 pounds, lots of that muscle from years at the gym and in sports.  I wish there was a "small intestine stretching" exercise;  I guess that is the decider on one Vs. two operations.

these questions would be great and might get a quicker answer on www.j-pouch.org, for people who are considering or who have had surgery...great place to go for any questions at all!
