Last night I got a flash of energy and inspiration and made a great dinner. I sauteed a piece of salmon in dairy free margarine/bit of oil with salt and pepper until it was crispy on the outside.
Can't do vegetables, so I made a hot fruit salsa out of half a mango, half a can of pears and a few dried apples rings. Sauteed the fruit in some dairy free margarine, added some of the pear juice, a splash of hot sauce, drop of gf soy sauce and a light sprinkle of cinnamon sugar. Brought it to a boil and simmered for 5 minutes - the sauce thickens.
Plated it and brought it to the table and it looked like a gourmet meal.
Can't think of what to have tonite so it will probably be Glutino pretzels and almond butter.
