Hi Nor_TX....I'm not doing very well, unfortunately. My Lyme disease is really a serious problem right now. I should say that I would be GF even if I did not have celiac disease because of the Lyme. Many Lymies follow a low-carb GF diet because it seems to be the best way to go for this disease.
I'm struggling with the side effects of the many months of antibiotic therapy I've undergone for the Lyme disease, including possible MRSA and C. diff infections!
I really have not had much trouble sticking to the GF diet anymore. It's become second nature to me. We moved recently and have already found a new gluten-free pizza place and a Thai restaurant that delivers (most Thai food is naturally gluten free, as long as you avoid dumplings and recipes with soy sauce!).
