I was told that if gluten levels are high in a celiac sufferes system when tested, their GI are able to hospitalize them due to that matter due to something it can do to the bowell? Is this true? Also, once being Gluten free for so long, is eating gluten such a dangerous thing?

Not likely that severe unless the disease went misdiagnosed for a long, long time and one developed Lymphoma as a result (the risk of Lymphoma is significantly higher in untreated Celiac disease, but this risk returns to normal if one eats a strictly gluten-free diet)...

If one has Celiac disease, the immune system attacks healthy cells when it sees gluten.  This means no gluten is ever safe for a person with Celiac to eat.

If you have celiac then gluten free for ever is the way you have to go , i first went gluten free after a few months i cheated big time and got so sick , dr said once your body cleanses its self the reaction to gluten for most is worse than befor cause your not use to it being in yoru system. I hope you dont have to get hospitalized , i hadnt heard of that but i dont know any other celiacs in person. good luck
