Ideas for Gluten Free on Lazy Days?

Hello, all!  I'm a Crohn's patient that is trying a GF diet just to see if it helps alleviate my symptoms.  I'm trying not to jump right into the GF substitutes and just go with naturally GF products but the Crohn's really doesn't like salad or raw veggies right now so it's tough.  I've got several recipes that I can make but I'm wondering if you have any suggestions for GF meals that I can make quick on the nights I don't have time to cook or even things I can take to work for lunch?  I know these won't be the healthiest items but these nights are also when I'm going to fall off the wagon and I really want to stick with this and see if helps or doesn't.  For example, I thought maybe a box of those corn taquitos would be easy on busy nights, etc.  I'm in a Crohn's flare so my energy is pretty low so simple things would be great!

   My daughter also has celiac (along with crohn's) so she is 100% gluten free. I have to pack her a lunch everyday. Some easy things that she loves are gluten free crackers or chips (there are tons of different chips out there from tostitos to bean chips) and she will dip any of these in egg salad( I keep a few hard boiled in the fridge), tuna salad and chicken salad. I sometimes mix in some avacado. It's so easy to keep these in the house. This is kind of in place of bread

AND the fact that there are so many chips and crackers that are really yummy it makes for a big variety. She eats yogurt especially Chobani Champions, They're Greek yogurt and they look like they're packaged for kids, They really are good for greek yogurt. Baked potatoes (and sweet potatoe) I do them in the microwave.Frozen Sweet potatoe fries. I find it easy to make her homemade mac and cheese I use Velveta cheese and just melt it in the microwave over the pasta. It makes the pasta actually taste good.  Van's frozen waffles and pancakes are pretty good. If I think of some more I'll post them. I hope this helps... Oh yeah she LOVES hummis! She will dip just about anything in Hummis, crackers chips veggies (if you can't eat raw just cook them a bit and maybe you can tolerate them)

I have a snack drawer at work with lots of GF products - pretzels, crackers, wafers, cookies, etc. If I don't bring lunch to work I usually get a burrito bol from Chipotle, or order an omelet from a diner. I also bring hard boiled eggs, yogurt, baked potato, and microwavable frozen rice/potato meals for lunch. I just check the ingredients to make sure it's completely gluten free.

I only eat quick and cheap... and as a g-free dieter that is hard. But here are my secrets. I buy two boxes of Annes rice pasta and cheddar Macaroni and cheese and make them both at the same time mixing in 1/4 brick of real cheddar cheese. Then separate them into freezer bowls and stick them in the freezer so that I always have mac N Cheese on hand. I buy quarter ham, slice that up about half into cubed, mix it with frozen seasoned potatoes, sprinkle some cheese in there and bake it. That's good. Then you can freeze the rest in individual baggies. (I'm single so I live out of the freezer) You can also freeze the remaining sliced ham and use it for omelets and baked potatoes later. Buy gluten free cake mix and add a bunch of berries and fruits then u have an actually edible cake because for some reason instead of making use of the many varieties of flour out there we in America must try to make everything resemble wheat flour rendering it completely inedible. Quiche! Oh, that is yummy and you can put just about anything in it. Bunch of eggs, milk, cheese, meat, vegetables of your choice and you've done. Also, Chex makes gluten free cereal. Many fruit snacks are gluten free. Fruity Pebbles and Cocoa pebbles are also. And Frito Lay, I believe does not use wheat in most of their products.
