Yes, it is possible to have Celiac and Eosinophilic Colitis... I also wonder, because the flattened villi criteria to diagnose Celiac can also be caused by eosinophilic inflammation in the duodenum (Eosinophilic Enteritis), if he actually has an eosinophilic gastrointestinal disorder that flares when he eats gluten (my DH has this)...
