I'm working with a gastroenterologist to find a cause for some symptoms and he tested me for celiac. Biopsies after a recent EGD showed "lymphocytic infiltrates consistent with celiac." I'm three-months post-gastric bypass and have an extremely limited diet both due to the bypass and the symptoms. I don't think I have it and he seems pretty sure. Well, the results were negative but he told me at the visit and in the results letter that it could be a false negative "due to limited diet." Chinese meat and vegetables is about the only thing I can tolerate and have been able to tolerate for going on a month now. I was under the impression that chinese food is loaded with gluten. Am I wrong? Wouldn't I at least be having attacks to some severity every time I ate it instead of it being the ONE food I can tolerate?

Did your GI run a complete celiac blood panel? I know you say you are gluten light, but other things can cause intestinal damage and the blood tests, plus the biopsies determine a CD diagnosis.

You do not have to have any GI symptoms to have CD. You do not have to have any (silent celiac disease). I did not. I ate bread every single day! I presented with life-long anemia. Of course I did have tiny symptoms that were celiac related, but chocked it up to aging.

Chinese food is not necessarily loaded with gluten. Soy sauce, flour to coat meats, and wheat noodles are some examples.

The University of Chicago's celiac website has some of the best information in an easy-to-read form (I would link, but my device is acting up). CD can develop at any time. Pregnancy, stress, surgery, and illness all can trigger it.
