I have been reading that coconut may help colitis.  Is that one of those silly rumors, or has anyone benefitted from coconut oil, or water?

It's true, for many eating coconut macaroons has really helped them.

LOL, yes, but even just eating plain (fresh preferably) coconut can be very beneficial, drinking the milk/oil out of the coconut is too (just be sure to strain the milk before drinking it), it's great all around, gives you very healthy skin and it's helpful with inflammation.

Coconut macaroons are wonderful. When I'm feeling really decadent, I make a home-made batch that's almost all egg white and coconut. Almost like a coconut meringue.

I love coconut anything!!! Hmm, Edy's makes these frozen fruit coconut bars and they are delicious and have actual coconut in them also I think Edy's or Haagen Daz has a coconut sorbet too.

Prednisone 40mg 1xday, Simvastatin 20mg 1xday, Diovan 160mg 2xday. Tekturna 150mg 1xday, Fursomide 20mg 1xday.  Potassium 100mg 2xday, Fosomax 70mg 1xweek. MCD may be from hypersensitivty to 5ASA drugs.

Macaroon cookies


Ingredients;

2 egg whites
1/2 cup of honey
1 - 2 cups of organic or fresh coconut


Directions;

Preheat oven to 375 degrees F, mix all ingedients, form tablespoon size balls and flatten on greased cookie sheet,
making them into small pyramids (the amount of coconut needed may vary depending on how thick you want your
cookies---you don't want the liquid to run out of the cookie when baking----Bake in oven for 10-12 minutes, cookies
should be firm but soft inside with just a hint of browning on edges.

I would think you would have to eat a lot of cookies, I drink the cocanut water and it does seem to do the job for me anyway I have been drinking it for a long time now. And it doesnt taste bad.

I have found coconut water to be very helpful. I drink it everyday. I used to get fresh coconuts from Asian/Indian grocery stores. However, now you can order them on Amazon. Just do search for coconut water.

In India, drinking coconut water is also supposed to be good for you after surgeries for its healing properties.

Coconut has natural anti-inflammatory properties and is actually really good for just about everyone. I personally love Macaroons! Mmmm! And yes, they are so super easy to make and quick too. I was reading on a website about the one fellow that would eat 2 macaroons a day to keep his symptoms at bay. He was doing that for many years so I thought, hmm ok, I will give it a try. I did start to feel better - not remission better but overall better but you know what happened? I got sick of eating macaroons! But I still love anything with coconut :)

If you have a Whole Foods near you, or any organic store, I just called and they all carry the coconut water. I just ate my first 2 macaroons. :)
They also have coconut oil which can be spread on toast the guy told me.
Hey, I'm for trying anything that will make me feel better.

(but I love coconut...I wonder if a Mounds bar would be the same?)

They sound sooooooooo good.  I'll bet if you melt chocolate and dip the bottom in the chocolate and let harden on wax paper they will be even yummier.. yeah
diagnosed with uc 27 years ago.  Enojoyed 10 - 12 year remission
 
asacol 400 mg 3 tabs 3x a day, didn't work
was on prednisone, doc took me off.  Asacol didn't help.
 
currently on Sulfasalazine 2 tabs 3x day. Folic acid,mesalamine enema every other night, Omega 3, Probiotics, multi vitamin, cacium supplement, Biotin

thanks for the recipe -- I really like SIMPLE recipes - can't make it any easier than that

I recently picked up Extra Virgin Coconut Oil in a 16 oz tub based on a recommendation from a friend. It is like a crisco consistency and can be used in place of butter or oil and used in cooking, baking, smoothies. I got it in Wal Mart in the natural herb and vitamin area. Almost $10 if I recall. She swears by it for helping a weight loss diet - helps to suppress appetite, (slow metabolism maybe???) soothing for the digestive tract for IBS and UC related things. etc. Use 1-2 teaspoons each day.

I got it more for me than him (as I need to lose some weight) but I wonder if a teaspoon per day might help him also. Gonna keep it near the stove to remind me to try to incorporate it in cooking.

It smells real good too.

61 yr old male~Colitis 1st diagnosed Jan '05-cleared up within a few wks. Flared again in May '06 (now UC) & hospitalized 5/07-currently heading towards a remission. Osteopena of spine from prednisone DX 8/07  Oct 07 feeling quite normal most days.  150mg Imuran  Zero mg prednisone   12 Asacol, Lidocaine Hydrochloride Jelly 2%,multi vitamin, iron 1X day, DanActive, chewable calcium, fiber capsule 1x day, Prilosec 20mg, enalapril 10mg, glipizide 5 mg, zocor 40 mg, baby aspirin, (Fentanyl pain patch 50mg 72 hrs  Morphine Sulf 15 mg twice daily)Cortifoam enema PM, Canasa suppositiry AM, folic acid 1mg, Fosamax 1x month

Misdiagnosed with just Hemeroids since I was 12!!
Bad flare after birth of first son in 2004,
another bad flare pregnant with 2nd baby summer 2006
recent reallly bad flare Dec 2007- 1st time w/ prednisone
Just tapered off Jan 20,2008, Flaring again today :(
Asacol for last 4 years 3pills 2X's, ROWASA as needed up to 3X's a day,
now just Asacol 3X's a day, probiotics 2X's, fish oil
Tryed-acupuncture, herbal remedies
