pregnant... how to gain a bit more weight with healthy foods and low dairy?

hello all!
so far so good with this pregnancy although things are getting a bit mushy lately and i have a feeling it is because i've been doing a little more dairy than usual. some whole milk yogurt mostly.
i normally do okay with most cheeses but any other dairy i feel like i should space it out with a few days of no milky stuff.

anyway, i've not gained much weight this time. i'm already almost 21 weeks and i'm only about 109. started at 105 and lost a couple and then gained back up to where i am now. so i'm trying not to worry too much about it, but i don't want to be underweight if i can help it.
my appetite is okay, but not not as big as it was with my son (pre-UC).

so any other ideas for putting on a little extra padding? i can't eat eggs or soy.

29, happily married, stay at home mom to 2 year old son. due to have baby #2 9/17/08
UC (probably pancolitis, but no c-scope yet), diagnosed June 2006, started having major symptoms sometime in January 2006, about 3 months after childbirth. 2nd flare (minor) may 2007 after taking caprylic acid for 2 weeks.

-Prednisone 8/28/06-2/28/07. and again may '07, 8 week course.
-Prayer! asacol, probio, ground psyllium husk, prenatal, folic acid, cal-mag
