Exactly. I know that if I ate that much spinach, there could be no sign of anything red in there.
But I am skeptical for a different reason. This approach suggests that diet is the trigger and diet is the solution. I have always eaten well, with lots of greens, carrots, and other vegetables and fruits. Despite this, I developed UC. In addition, there has never been any relation between my symptoms and the food I eat.
My own experience indicates that diet has no impact for me. I have always been obsessive about having a healthy diet, so I know I was always getting the vitamins and minerals that I need. A deficiency could not have caused my UC.
That said, I am glad people are finding some success with this approach, and sharing experiences on this board is helpful to us all. Spinach is certainly better for us than the nasty medications!

Previous Meds: Colazol (caused pancreatitis), antibiotics, Prednisone (several cycles 20mg/day)
Current Meds: Remicade beginning in Oct ‘07, various vitamins, Imitrex, Lortab, Lisinopril
