Since I'm trying the sunflower seed/spinach thing and I know a few others are too, I thought I'd put my foodie experience to good use and share some recipe ideas for those of you who are struggling to find good ways to use these ingredients.
For breakfast, make a sandwich with two pieces of toasted white bread, spread with sunflower butter and fill with thinly sliced banana. The butter will get warm and melty and oh-so-good. I used to eat this with peanut butter, and the sunflower butter is a good replacement.
For a snack, spread the sunflower butter on a peeled, sliced apple. YUM! Honeycrisp apples are finally in season, and they are the BEST!
For lunch, make a salad out of fresh baby spinach, canned mandarin orange segments, sliced almonds and poppyseed dressing.
For dinner, try this great recipe for Penne with Spinach and Feta that I found on Recipezaar:
1 T. butter
6 T. extra virgin olive oil
1/3 cup pine nuts
5 garlic cloves, minced
2 10-oz packages frozen spinach, thawed and well drained
4 large plum tomatoes, seeded and diced
1 lb penne pasta, cooking according to package directions
12 oz feta cheese, crumbled
Melt butter with 2 T olive oil in a large skillet over medium heat. Add pine nuts and garlic and saute until pine nuts are light brown, about 5 minutes.
Add the spinach and tomato and saute until heated through, about 3 minutes.
Place warm cooked penne in a serving bowl and toss with 4 T olive oil.
Add feta and season with salt and pepper (careful with salt as feta is very salty).
Toss thoroughly and serve immediately.
Note: Pine nuts can be difficult to digest. Make sure you chew them thoroughly or try replacing them with sunflower seeds (I wouldn't saute them, though).
