princesa, don't forget that stress can exacerbate IBS...and those with IBD and IBS can suffer regardless of what they eat.
I would suggest taking the probiotics at night, the metamucil after supper and smaller amounts of digestive enzymes. Sometimes, they can cause a faster moving digestive process with more gas.
Of course...not eating foods that one knows won't cause gas helps immensely!
