spinach and sunflower-?

Just diagnosed with UC Dec 1st, 2008. On Pentasa 3000 mg daily. Also dicyclomine but no improvement yet I want to try the spinach and sunflower diet since reading so much about it here. My question is -when during the day do you eat it and how much at a time.? Or is it more than once a day. ? I realize will take a while (if it works and I really hope so) This forum is great and I really appreciate reading other people stories. THANKS TO ALL OF YOU. I will be a daily visitor of this for sure.
38 years old  high school teacher
Pentasa 3000 mg daily
dicicloymine 10 mg 3x daily
have avascular neucrosis of right hip last 15 years
had to stop ibuprofen, now hip kills me, looking into replacment
tylenol arithtis 2400 daily
 
Surgery is always on mind.
I have gambled and lost on too many "gassy" days!!

i normally take my sunflower seed handfuls through out the day. 4-7 of them. I normally have the whole can of spinach as a lunch, but have eaten for dinner if I was not able to get home at lunch time. On those days I take sunflower seeds and baby carrots for lunch. I'm not sure it matters when, but others could tell ya for sure. This is just how I have been doing it. Day 10 on this diet with definate noticable results.

30 mg predisone, 9 balsalazide, rowesa enema, 2 gemfibrozil, 1 norvasc, 1 metoprotol, 1 allopurinol, 2 probiotic, 2 aloe vera
gluten intolerance... attempting to live no/low gluten

update: down to 25 mg pred a day as of 12/25/08

Thank you unclebubba. I am going to start slowly with a few handfuls and a can a day (maybe half can at lunch and half can at dinner) I sure hope I get some positive results soon.

leading up to when I went into remission from that diet I sometimes ate the seeds throughout the day but most of the time I ate the seeds and spinach after work in the evenings because that was most convenient for me. I also ate oatmeal (with 2%milk) every morning (and still do) and oatmeal contains a fair amount of the same nutrients that sunflower seeds contain so that probably helped get some of the needed nutrients throughout the day.
I think its good to eat a lot of spinach for the first few weeks but once you start seeing good results a full can a day is not needed and later you can experiment and reduce the amount and find what the optimal amount of spinach intake works best for you. I also ate 4 to 7 handfuls of sunflowerseeds a day while flaring leading up to remission.

The magnesium in spinach is a natural anti-inflammitory

Dx'd 05/2007
7 Pentasa per day (4/3)
Corti Foam p.m. 2X per week
Prebiotics and Probiotics, Bowel Soother, Fish Oil, Calcium, Multi Vitamin and Melatonin
Trying to reduce sugar in my diet but cannot tolerate artificial sweetners
I excersice daily
Did I happen to mention I HATE this disease!!!

been eating a lot of seeds and spinach....happy with it so far....it seems easy to overeat seeds!! great stuff.
34 yr old male. UC for 14 years. Started left-sided, most recent scope shows pancolitis. 40mg pred (as of 12/16/08), 12 pills Asacol per day, 1mg Atavan per day (anxiety) when needed, Fish oil pills, Culturelle probiotics, Multivitamin. Recent Endonasal brain surgery to remove non-cancerous hormone producing tumor on pituitary gland (and I am still more afraid of my UC!!) "I poop in the woods because I can"
