Good Spinach Recipe

Hi All,
I've got another spinach recipe that you might like.  Before I was eating my spinach with cheese, and the calcium was cancelling out the positive effects of the magnesium.  So, I had to make something that didn't have any cheese in it.  Plus, I try to eat it with something bread-y so its gentle on my tummy.  Anyways, here goes:
 
Spinach Pasta
 
12 oz elbox macaroni, cooked in salted water according to package directions
3-4 tablespoons extra virgin olive oil (good anti-inflammatory)
2 cloves garlic, minced
2 10oz boxes frozen chopped spinach, thawed and squeezed of all liquid
1/2 can of diced tomatoes, drained
salt and pepper
 
Cook the pasta in salted water according to package directions, drain and toss with 1-2 tablespoons extra virgin olive oil.
 
Meanwhile, in a skillet, heat 2 tablespoons of the extra virgin olive oil over low-medium heat and add garlic.  Cook until fragrant (2-3 minutes).  Add the spinach and tomatoes and cook until heated through (3-4 minutes).  Season well with salt and pepper.
 
Add the spinach mixture to the pasta and toss until well combined.  Serve immediately.

No, there aren't that many tomatoes in it - they're really just added for flavor. I don't really have anything to compare it to except maybe like a pasta primavera.

I have a more gourmet version of this recipe that includes pine nuts and feta, and its SO good but pine nuts are notoriously hard on the digestive track and the feta has calcium. Phooey. Burned again.

sometimes the acid in spag sauce gets pretty harsh even. I mostly put a a couple baby carrots in with that kind of stuff. Takes some of the acid away.
Agree about the pine nuts, and I'm not really a feta person. But this sounds good as it is...

Is that a Kiss520 original or did you hear about it? I would have never thought to mix the two.

I never have trouble with spaghetti sauce, but it seems like something that would just tear us up. I'm always surprised that I tolerate it, and I'm glad because I love it.

I bet you could throw some roasted carrots into my recipe. They'd add a nice sweetness and give you that extra dose of beta carotene. I think I'm going to try that in my next batch!

Have you roasted them before? Just cut them into small sticks and toss them olive oil, salt and pepper and put them on a roasting pan in the oven set at 400 degrees for 20 minutes. I like to throw on some dried 'herbes de provence." They smell heavenly with the herbs.

hmmmm roasted carrots.... sounds like dinner tonight. Got a lean steak to go with. Grilled steak, and roasted carrots. Not even supper time and that makes me hungry. LOL

Yeah, I think my hubby and son would wonder where the heck I am and why dinner isn't on the table. 

I can tolerate cheese and spice - I just have to avoid cheese with my spinach so the magnesium can do its work.  If you're a foodie like me, you would love this website:  www.recipezaar.com. Its the most incredible database of recipes (with reviews) and a fantastic community of cooks.  It has absolutely saved me when I was looking for recipes with very specific requirements (such as gluten-free, dairy-free... anything you can think of).  Do give it a try.  Tonight we're having fantastic leftovers from recipes I got on that site - cheddar potato soup and roast beef sandwiches with horseradish mayo.  Gettin' hungry just thinking about it!

been to recipezaar. Love it. Not sure where I got this recipe from but it has been a hit all through the holidays.

Buffalo Chicken Dip.... 2-10oz can chunked chicken drained, 3/4 cup Franks Red Hot ( or other pepper sauce ) Simmer in skillet over medium heat until heated through. Stir in 2-8 oz packages cream cheese (softened ) and 1 cup ranch dressing. Cook stirring thourghly until well blended and warm. Mix in 3/4 cup shredded cheddar cheese and transfer everything to crockpot. Sprinkle another 3/4 cup shredded cheddar over top of mixture, cover and cook on low until hot and bubbly ( about 2 hours ). Serve with celery, tortilla chips, and/or crackers. Wow this is good and people seem to love it.

What an awesome recipe for a Superbowl party. I've gotta save that one. I love anything with buffalo chicken. My old office cafeteria used to serve wraps with buffalo chicken and they were the best. I even recreated them at home.

By the way, your screen name cracks me up - reminds me of Paula Deen's brother.

Yeah I'm making that for the superbowl party at the GF's son's sports bar. Thats where I watch all the games ( as I'm to cheap to pay for sat. or cable tv ) LOL.

Will prob also make Jezzebel dip, although I no longer eat it, everyone else loves it. Just to Hot for my gut anymore.

Screen name.... Yeah funny story how that came about, but to long to post here. My nephew is little bubba and I'm uncle bubba. All the kids call me that. Neighbor kids, friends kids. Sure is better than their parents tryin to get them to call me Mister.... That makes me feel old. LOL

Dx:  UC Proctitis 2006 
Meds:  None so far. Garlic works to ease flares. My GI laughed when I told him and said it was just coincidence. 
Started Meds:  Apr 9 08 500mg 5ASA (salofalk) to ease flare, tapering, stopped. 
Diet:  Regular fresh garlic, Biobest yogurt daily, Omega 3 supplements, very limited junk food, carbs and processed food, low fat diet.  Lots of fresh fruit and veggies (limited potatoes). 
 Added: tumeric and probiotics.

Back to recipes,
I have one for those of us gluten-free (and it demonstrates the extent of my cooking skills)(I'm also not supposed to eat egg whites).

Mix two or three egg yolks with some swiss cheese and a bunch of the canned spinach and microwave for about a minute. You'll get spinach souffle! You might want to add salt.

I use a small disposable coffee cup because it's hard to wash the dish with egg on it. Also accomodates the extent of my interest in all things kitchen.
49 year old female attorney, diagnosed UC/pancolitis 1985, no surgery but much suffering.
Asacol/5ASA 6x400 mg maintenance for 20+ years; use prednisone & Rowasa for flares. 
August 2008 sought care of naturopathic doctor. Food sensitivity test showed gluten, other intolerances; started diet without gluten, soy, dairy, tomato etc. Replete$$ probiotic powder at first, now Forte pills. Doing much better, but still having some bad days.

peety, sounds like a quick tastey one.
Just might be breakfast tomorrow morning.

Maybe we should just title a thread, recipes and let people post favorite recipes for this disease. I know we all follow different diets, but some of these recipes encompass other diet. The eggs and canned spinach..... would that be low resistance, gluten free, and spinach sunflower all in one. Even would be vegan I think ( not sure to much about vegan diet )
