Just a forwarning.... I just might be whining tomorrow.  Hopefully not... am tryin to take precautions.  But its cold and windy here. snow on the ground.  had a day off.  what would you all take the time to cook on a day like this.  CHILI.  Put on a big dutch oven full of chili this morning.  Now I have taken precautions.... no sausage this time.... extra lean beef ( drained and strained grease ) ground venison. No hot peppers (just green peppers)  I full cooked the onions in a skillet even before I put them in the dutch oven ( and I went light on the amount of them ).  I did use cumin spice, but no cayenne.  Kept it as unspicy as I could and still call it chili.  I went light on the beans even. 
Tortilla chips don't bother me, so okay there.  Shredded cheese hasn't bothered me, so okay there.  Heineken beer hasn't bothered me, so okay there.  Its definately going to taste good (not as good as spicy would but..... )  Heck I made a BIG dutch oven full so I hope it doesn't bother me... lookin forward to left overs and freezin some.

There's nothing better than good chili that has been cooked in a cast iron dutch oven all day. Only way to make proper chili.... and serve with tortilla chips and shredded cheese. I can hardly wait myself. LOL

I looovvve tortilla chips and cheese. My favorite snack food is to buy those Tostinos chips, the small round ones, and Fritos mild cheddar dip. Now I want to add some chili into that mix *drool*. I don't have a dutch oven though; is it similar to a crock pot at all??

It sounds like you took all the proper precautions. I am sure you wont be in bad shape tomorrow. I've been eating tons of chili lately, it is so good. Pass some chili my way.

I just found out what a dutch oven was the other day. It is a big cast iron pot that can go on the stove top or in the oven. Le Cruset makes them but they are like $120+. I want to get one but I can't afford to because I spend all my money on medication. turn

Wow, beans, you are brave. I can eat it when I'm feeling OK, but never with beans...

I use the Tobasco mix in a jar, you just add meat and can add beans or not. It's very good.

Enjoy! Sounds like a good risk for a chilly day.

I usually leave the beans out of my chili, but just because I don't like beans of any kind. They have a weird texture to them that I don't like.

I use pork and beans because I don't like chili or kidney beans.
And a dutch oven is like a big cast iron skilliet. Bigger than a crockpot and has a lid. You can place it in the oven or over an open fire. Put charcoal on top of it. Many uses. Google it... you can even cook desert in them. Pies and such...

The health benefits of cumin for digestive disorders has been well known throughout history. It can help with flatulence, indigestion, diarrhea, nausea, morning sickness, and atonic dyspepsia....making your chili as healthy as possible is a good idea, enjoy!!

been up two hours now and so far seems like a normal morning. I might have slipped by on this one. LOL. Still missed the jalapeno's and such, but prob wasn't a good idea. Oh well, least I had some good chili.

well its end of the day and I think I made it through good... normal. No extra bathroom trips. Guess I skated by on the chili. LOL. Bt now its time to go grocery shopping tonight and the GF has a craving for taco hell. Oh well... guess I'll try this again. I know I can eat tortilla shells, they have no gluten. As long as I keep this sauce mild I think I'll be okay... any thoughs on taco hell? LOL although buy the time I read this it will be to late. LOL

its been a good morning so far... up about three hours and normal so far. Course I kept it to taco's and mild sauce. LOL

So funny, I got home last night and my boyfriend was whining about wanting taco bell too, so I said screw it, I'm not planning on going anywhere this weekend, I wouldn't mind eating a taco. I just got their nachos bellagrande thing and one crunchy taco, no spicy sauce or anything and I haven't had any problems yet. Just my usual morning bathroom trips without any additional pain or blood. Woohoo!

There's a reson we call it taco hell, LOL But sometimes it just tastes so good. LOL. Have had "bad" things last two nights.... think I'm going to play it safe today and tomorrow and not push it. LOL

They are building a new Taco Bell around the corner from my house! My kids are very excited! What's funny is that I have to drive through their driveway to get to my gym!! I can't believe I will be tempted twice each day I work out! I only eat there once in a blue moon, when my husband and I agree we can be "bad," but around the corner is just too close! It is the worst food, but oh so good! LOL

I spoke to soon.... Not sure what caused me problem this afternoon. Maybe it was 2 days of being bad. ALthough this morning was normal as could be. Late this afternoon I had major BM's cramping and felt like I was passing razor blades. AM still not blaming this on taco hell though due to the timing. I think It might be because I bought some different sunflower seeds last night to take. I normally buy plantars dry roasted and last night I bought a loal health store brand because of pricel. They tasted raw, not roasted. Guess I'll know tomorrow... if I still have problems in afternoon, then I'll know it was the seeds. and get rid of what I have left of course. LOL. If problems are gone... then taco hell must have done it to me... LOL I did not have any blood or mucus though. and after I had my MAJOR BM's.... I felt better with no problems. SO I guess today was normal except for about 30 minutes this afternoon. LOL. If I have those probs again tomorrow I think I will up my spinach again for a few days.

today has seemed fairly normal... I still think I'm going to up my spinach intake back to a can for a day or two. And I can't stand chili beans either.... Yuck. pork and beans I can at least tolerate the taste. But have steered clear of them for the most part since UC has struck. Staying awya from beans really hasn't been a problem for me. Don't really like them. Only bean I do like is green beans. I grow and can my own... MMM. Best is pickled green beans.

Have you ever made white chili? It has chicken, white beans (kidney, lima, whatever kind you like), mild peppers. My mother -in -law made it a few weeks ago and it was really good! I'm really not much of a cook, but it is something I would try.

You seem like you live a fun and adventurous UC life!!

I believe you're the one that enjoys an ocassional "low gluten" Heineken as well...if so, cheers to you!!

Happychic... Yes I have made white chili.... and yes it us good. Its not really chili to me though. It was good, just not what I would associate with the word chili. LOL But by all means if you can tolerate beans, then I recomend you try it. Make it your self, you can get some really good recipes just by googling. One thing about having UC, even those that didn;t cook before learn to now. I have always enjoy cooking, now its become a hobby because when flaring a resteraunt can be a long trip. Or they might not have have things on your diet. If you learn to cook it can become a hobby, plus you can invite friend over in a social siutation to dine in the comfort of your own home.
Shadam, yes I am one of the ones who enjoy a heineken. And yes I try, even when flaring to have fun and keep a god attitude. I have my bad days, dont get me wrong. But for the most part I am a postive person. Thanks for your wishes and same to you.
