Questions on Spinach and sunflow treatment

I want to try this but I can not find the original post on Healingwell.
I have several questions...
1.  Must we choose frozen spinach or just spinach juice? I can get fresh spinach form asian stores but I do not know how to cook..... Is the fiber in Spinach bad to our colon?
2.  GI told me to avoid fat. So, can I take peanut butter?(I think peanut butter also consists of fat) I am a thin guy and try to eat more to increase my body immune system, seems butter is a good choice.   (Definitely, I will try to buy sunflow butter nearby....  Try to find it first)

Diagnosed with UC in whole rectum Oct/2008 by colonscopy
Cause of checking: bleeding everytime went to wash room
Put on Canasa 1000mg 1 per day at bedtime (14 days)
Three days after Canasa, bleeding stopped.
Then Asacol 2*3 daily.
A month later, bleeding began......
15th/Dec/2008     Canasa  1000mg  1 perday at bedtime
bleeding stops after 2 days..
26th/Jan/2008      change Canasa to Asacol   2 * 3 daily

I use the canned spinach. ANd ya basically don't cook it... I just heat it up in a sauce pan with a little vinegar and salt and pepper. I also never had trouble with just plain roasted and slted sunflower seeds. Although I am sure to chew them well. Only sunflower seed prob I had was when I bought some from a healthfood store that tasted almost raw. My gut didn't like those. But other on here get that kind and seem to have no problem, so maybe it was just the batch I got.
This diet has helped me alot... good luck

30 mg pred, 9 balsalazide, rowesa nightly, 2 gemfibrozil, 1 norvasc, 1 metoprotol, 1 allopurinol, 2 probiotic, 2 aloe vera tabs
Following gluten free diet as well as spinach/sunflower regime
**down to 25 mg of pred 12/25/08 **down to 20mg of pred 1/7/09**down to 17.5 mg 1/22/09
**down to 15 mg of pred 2/3/08**down to 12.5 mg of pred 2/13/09
MED CHANGE: 1/13/09-- 4 Lialda, 2 Pamine Forte, 1 Florajen3 probiotic, 2 Aloe Vera tabs, Rowesa every other night, 20 mg of Pred, Lomotil as needed, 2 gemfibrozil, 1 norvasc, 1 metoprotol, 1 allopurinol

You probably have to figure some of this out for yourself, trial and error, because we respond differently.

I have no trouble with fatty foods, they don't hurt or help me. I eat bacon when I'm doing low carb, and it doesn't bother me.
But I absolute cannot tolerate fresh spinach! Very bad for MY colon. I can eat it cooked/canned, in moderation.

I hope you find the sunbutter, it is good. I admit, last time I added a little Splenda to make it sweeter... I know, it's sacrilegious! Apologies to the purists!
49 year old female attorney, diagnosed UC/pancolitis 1985, no surgery but much suffering.
Asacol/5ASA 6x400 mg maintenance for 20+ years; use prednisone & Rowasa for flares. 
August 2008 sought care of naturopathic doctor. Food sensitivity test showed wheat/gluten, other intolerances; started diet without gluten, soy, dairy, tomato etc. Probiotics (Ultimate Flora, 50 billion). Doing much better, but still having some bad days.
