I could have died and went to heaven yesterday and gone with a smile. I always said if I were offered a last meal it would be my mom's red cheese enchiladas with her beans and rice. Especially since i rarely get the courage to eat them anymore. So I had them for lunch and leftovers for dinner. I don't consider them junk food b/c it's all homemade but just very spicy and you all know about the
But last night after dinner I was feeling horrible. I felt I had to go to the restroom like every 30 minutes but actually didn't and my lower back/colon was tender and in a lot of pain. :( Thank goodness my body did what it was supposed to do and eliminated as much as possible in the morning b/c i have felt very good all day. I have been feeling better and better lately so of course i had to try my mom's mexican food.
Well i just wanted to say how a combination of foods caused inflamation. I know this b/c of the urgency, tenderness/pain and the blood stain. So no Dr better not ever tell me again to eat whatever I like...Well it's after 5 so i'm going to the YMCA, told you i feel so much better today. Dueces. By the way i had fish and mostly vegetables, squash, carrots and brocolli for lunch today..

currently:  Mildly Flaring 
RX/day: none! Tapered off Prednisone 9/20/08. Lost job and insurance 10/2007 and stopped taking asacol and Imuran cold turkey
OTC: enzymes everyday, turmeric, seldom use probiotics, vitamins & other natural treatments
Diet: SCD helps tremendously, but am not strictly on it.
Other: Prayer, food combos, good posture, chewing more, etc.

LOL, "eat whatever you want" us usually understood to mean "if it hurts you, don't eat it." Yes, if there's any inflammation left the wonderful picante flavor of good Mexican food will hurt. Ever laid a jalapeno pepper against a scrape on your skin?

But I surely understand the call of Mexican food. I'm so glad I can eat it again. The spices don't bother me at all, but I do limit the amount of beans I eat for the usual reasons.
Moderate to severe left-sided UC diagnosed 2001.

I love my mom's enchiladas, too! My mom uses a little mild enchilada sauce, since spicy stuff sometimes bothers me and she's more paranoid about it than I am. Beans cause me gas, so I take Beano beforehand.

A tip: Next time you get the urge for Mom's enchiladas, don't eat them twice in the same day and you'll probably experience less discomfort afterwards. Quantity does play a part.
Diagnosed with ulcerative colitis spring 1999.
Maintenance dose sulfasalazine. Probiotics, l-glutamine, vitamin D and fish oil caps. George's aloe vera juice. Oregano oil antibiotic, antiviral, antifungal. Mostly grain-free and dairy-free diet. Long-term remission with only minor blips.

It's making me hungry too, and I'm thinking of mac and cheese; my mum makes such a simple dish into a delicious gift from heaven.

100 mg Azathioprine, 4800 mg Asacol
VSL#3 x 3 times a day, Metamucil wafers
Vitamin E enema or Mesacol/Asacol enema at least once a week
Spinach & sunflower seed diet

My mother in law makes some great casseroles and I suffer immensely after eating, no, we cant eat whatever we like....My recent flare has even made it impossible for me to eat the spinach and sunflower seeds diet I was doing so well with....Bummer!!!
34 yr old male. UC for 14 years. Started left-sided, most recent scope shows pancolitis. 30mg pred (as of 2/01/09), 12x pills Asacol per day, 1mg Atavan per day (anxiety) when needed, 20mg paxil per day, Super-omega fish oil pills - 1x per day, Flax oil pills - 1x am, 1x pm, Culturelle probiotics - 2x am, 1x pm, Spinach and sunflower seed diet (moderated recently due to kidney stones). Multivitamin. Recent Endonasal brain surgery to remove non-cancerous hormone producing tumor on pituitary gland (and I am still more afraid of my UC!!) "I poop in the woods because I can"
