I really miss mexican food. I used to make bean Burritos With avocado, and lots of cheese, but not cows cheese I used to get a mild goats cheese. I miss them so much. If I didn’t flare this week I would have made lots of them and ate so much.

Diganosed ulcerative colitis November 2007
Present medication- 1X 500mg pentasa in the morrning= 250g pentasa and 1 X250g Asacol every other evening
Diet- Tried raw food diet with 80% raw foods, found some pro's and cons. Started to add more products to keep up weight as mine did not balance. Still eating raw spinage and still am combination eating. No dairy No gluten.  
 
Other medical problems- Born with asthma- no medication taken for this.
dyslexia- found out that many people with learning difficulties also have food sensitivity

Avocadoes are actually really good for the gut and I think eating loads of them helped me get into remission. I think black beans are allowed on the SCD, so maybe you could have some refried black beans (homemade) topped with avocado and some goat cheese...isn't goat cheese allowed, too?
Status: Remission since late May 2009!
Symptoms began in November 2008, ~4 weeks after giving birth to my son.
Eased for ~3 weeks in December, possibly b/c of probiotic use?
Returned in January 2009 (with a vengeance), diagnosed with pancolitis on January 30.
Currently taking Asacol (400mg 4 pills 3x daily), Rowasa twice weekly, Culturelle probiotic, and Zoloft (25 mg).

I don't know if Goats Cheese is allowd on the SCD diet. i am combination eating at the moment so I could not have any gluten free totias with it.

Try adding cilantro to something, it satisfies my cravings for mexican because it's my favorite part. And avocado is yummy too!
49 year old female attorney, diagnosed UC/pancolitis 1985, no surgery but much suffering. Asacol maintenance for 20+ years; used prednisone & Rowasa for flares.  Probiotics (Ultimate Flora, 50 billion), salmon oil (omega-3) when I can remember. 
August 2008 sought care of naturopathic doctor. Food sensitivity test showed wheat/gluten, other intolerances; eliminated wheat/gluten from my diet.
Bad flare in March, used prednisone. Humira denied, started Remicade 4/12 and doing great~ learning what normal is~ wow

I LOVE burritos...
when I was put on 60mg of prednisone, I wen tto the burrito shop and got a burrito, went to papa johns and got a pizza. put the burrito on the pizza and ate it. ahahaha.

I want tortilla chips and fresh salsa so bad. Guac would be nice too and a Margarita straight up to drown my sorrows.
Diagnosed with mild proctitis in March 2007: Treated with Canasa (as needed)
December 08: Began treating with Asacol 400mg (9/day) + Canasa 2x/day - Anemic
May 09: Off Canasa, taking Asacol (9/day)
Back on Canasa every other night + Asacol (9/day) + Probiotics + Iron
Reducing to 6 Asacol/day + Canasa + Probiotics + Iron - So far so good!!! -SPOKE TOO SOON! Back to 9/day...

haha. yea.. I know.. and you know what? aferwards, I wasnt even satasfied. I felt full and crappy, and really never want to do that again..
But thinking about still tastes good, so I know its just addiciton to food and the taste, rather then it being beneficial and nutritious.

I've actually been craving guac for the past week, myself, but haven't gotten around to getting some burritos yet.

I can usually eat Fajitas without much problem....I cant eat any fast-food taco bell style mexican, but a mexican restaurant that serves sizzling fajitas I can eat.... No go with the refried beans, or most other seasoned stuff on their menu, but for some reason Fajitas arent too bad....I suffer a bit, but nothing like a pizza or steak dinner....
Stats:35 yr old male. UC for 15 years.
location:North Western PA
DX: Left sided UC, most recent scope 5/20/09 UPMC Pittsburgh Presbeterian
Medications:20mg pred (as of 4/27/09), 12x pills Asacol per day, 100mg Imuran per day, 1mg Atavan per day (anxiety) when needed, 20mg paxil per day, Super-omega fish oil pills - 1x per day, Flax oil pills - 1x am, 1x pm, Culturelle probiotics - 2x am, 1x pm, Vitamin B-12 injections weekly.
Surgeries: Recent Endonasal brain surgery to remove non-cancerous hormone producing tumor on pituitary gland (and I am still more afraid of my UC!!)

i luuuuuuuuuuuuuuuuuv mexican food and still eat it all the time.

i have pain whether i do or dont, so i just eat it. and darn its yummy!
the only thing i stay away from really now is the refried beans. the gas is excrutiating and smelly! >_<

other than that, bring on the mexican!!!

I can eat the Salad at Chipotles without any problem, as long as they don't add beans rice, or sour cream. It gets me through my fix.

What I'd really love is to sink my teeth into a pepperoni pizza.

Diagnosed 8/99. Suffered for almost 10 years. I am currently on the Specific Carbohydrate Diet and am nearing remission. I feel fantastic! I have lossed so many years to this disease.

MED-FREE!!!

Doc wanted to put me on 6-mp or Remicade, but I refused to take the medications! Currently on the Specific Carbohydrate Diet.  I'm in remission and life is like it always should have been.

i usually get Fajitas too..like mbx. They don't bother me... I get the chicken fajitas and its grilled chicken and peppers ...don't see why that would hurt many people...

I LOVE chips n salsa.. they don't seem to hurt me for some reason.

Latest-Finally tapering off prednisone 5mg every week.. Staying on Lialda 2 twice a day. Currently colonoscopy shows remission. Apparently my symptoms are from my IBS side of my issues.
Medications:Prednisone 20mg, Lialda 2 twice a day, Align probiotic, Hyomax as needed.
I am so sick of this disease!

I found I rather have my health, then satisfied taste buds.. so Im taking a break from food like this untill I can heal my gut.. I dont plan on being on 6mp for to long, I want to get off as soon as possible..
Balance is Key. Nature Intended.
Eat for Optimal Digestion.
Fruit. Vegetables. Meat.
Veggie Juice, Coconut Water.
Raw Honey, Raw Bee Pollen.
90% Raw. 10% Cooked.
5% Fat. 10% Protein.

Food Combining.
6mp. Colazal.
Oxycontin.

guac is good. i have no problems at all with any spicy food, mexican or anything.
i do still miss mexican tho cuz australians have absolutely NO CLUE how to make mexican food.
i have to make my own salsa, tacos, guac, burritos, quesadillas, everything.
tasty tho. i am so glad i can eat it all.

the only thing that bothers me is stuff that gives me gas.like beans. and even then, its okay sometime.

food has no effect on the condition of my colitis.
i did go on liquid diet once to rest my colon from solids, dont know if it did anything tho or not.
been through over a year of trial and error with dietician etc... food and diet is not my issue at all.
im lucky i guess since a lot of you swear by diet.
