For Princesa and others on low carb diets - what are your favorite foods/meals?

I am getting pretty bored of my low carb diet, and was wondering what are some of the favorite foods/meals of others on the diet? My staple foods are chicken, turkey, and salads, with some eggs, fish, and red meat thrown in.

Since on this diet I've been basically symptom free (5 years) and even recently took up running again (5+ miles per day, woohoo), but the extra exercise also means I'm eating even more of my boring diet.

turned down recommendation to have j-pouch surgery
have been mostly symptom free since 2004 via diet modification (removed all carbs)

Egg salad with a small piece of baked salmon. I eat it for breakfast, yum

Are you cooking scrambled eggs in the microwave? It's so easy, and you can put different spices or a little cheese in. Even a tiny bit of salsa would be OK. Use a paper coffee cup so you don't have to clean a bowl.
49 year old female attorney, diagnosed UC/pancolitis 1985, no surgery but much suffering. Asacol maintenance for 20+ years; used prednisone & Rowasa for flares.  Probiotics (Ultimate Flora, 50 billion), salmon oil (omega-3) when I can remember. 
August 2008 sought care of naturopathic doctor. Food sensitivity test showed wheat/gluten, other intolerances; eliminated wheat/gluten from my diet.
Bad flare in March, used prednisone. Humira denied, started Remicade 4/12 and doing great~ learning what normal is~ wow

Egg salad with salmon sounds SCRUMPTIOUS. I'll have to try that.

I've tried eggs in the microwave, but my wife gets pretty grossed out by the smell. I work from home, so it's not too hard to scramble up an egg real quick.

I can eat fairly low carb (less bread, etc.) but just can't see myself without them entirely - guess I admire you guys if you can and it helps.  I don't find any type of food makes any difference.  I always feel worse when I cut out sugar and carbs to try it.  Oh well!  Since I hate veggies and fruit that does not help!

Senior - diagnosed with proctosigmoiditis - 6/2008   
Cannot tolerate mesalamines.  New specialist (June) - Cortifoam and Anusol three times a day for now.  Hope it works! (finding it impossible to do three times a day however)
 
Probiotic Align, Prilosec for GERD, Gas-X, vitamins, Calcium/D
Tylenol for knees and arthritis.

Egg salad with salmon would give me D! I'm helped by plain boiled white rice or farina. UCers run a gamut of reactions to food-- so I'm also interested to hear what's on Princesa's menu. / Old Hat (30 yrs with left-sided UC ... [etc.])

Boiled mangos with tilapia, and some asparagus with a cup of orange juice.
Pharmacist as of 6/12/2009.
Diagnosed 8/99. Suffered for almost 10 years. I am currently on the Specific Carbohydrate Diet and am nearing remission. I feel fantastic! I have lossed so many years to this disease.

MED-FREE!!!

Doc wanted to put me on 6-mp or Remicade, but I refused to take the medications! Currently on the Specific Carbohydrate Diet.  I'm in remission and life is like it always should have been.

Haha, the mangos and OJ would have me in the bathroom for 2 days ... WAY too high carb for me. Sounds wonderful though!

You say you feel worse after cutting out sugar and carbs, I actually felt the same when I tried my first attempt at the scd. I had strong cravings for these foods which had basically kept me going all these years! But I am slowly weaning myself off the sugar and cutting back on the carbs to give attempt number 2 ago mid week. I am in desperate need to put on some weight as I only weigh around 98Ibs.
Ulcerative colitis for around 15 years (Im am 28 years old now)

15 years of untreated colitis

I am taking Asacol foam enemas 2 x a day

Calcium 3 x a day for osteoporosis

Actimint pre and probiotics 6 x a day

My biggest concern BOWEL CANCER :O(

I know I am addicted to sugar and carbs. I have cut quite a bit but still can't eat raw food due to inflammation in my rectum.  I would love to send you some lbs.  I am about 80 lbs. overweight but would be happy to lose about 30.

Green Giant makes some frozen veggie combos I really enjoy as low carb side dishes to accompany baked lemon butter tilapia or a grilled turkey burger with salsa. I also like the sonoma chicken salad Whole foods makes with chicken, pecans and grapes. I love grilled or broiled squash or zuchinni with tomatoes. Eat alot of baked or grilled chicken with veggies or shred it up and add it to organic canned veggie soup for lunch. I eat eggs - scrambled or omelettes - quite a bit, too. You can make a low carb crustless quiche or frittata with cheese and veggies.
Diagnosed with ulcerative colitis spring 1999. Have been in remission for years with only a few minor blips. Scope on 6/22 showed no inflammation at all.
 
Maintenance dose sulfasalazine. Probiotics, vitamin D, fiber supplement and fish oil caps. George's aloe vera juice and l-glutamine for gut healing. Mostly grain-free and dairy-free low carb diet.

Ok, you made me hungry. If I could only enjoy all that.  My IBS stops me from some.  What I need is you to cook for me LOL!  I don't care for fish at all - just salmon and seafood.  Hard to force myself to eat stuff I don't like - veggies and fruit especially!!  I am a white bread lover but have cut back.  I am feeling great right now without medication but still passing blood on my very well formed stool.
