I'm in the I can't figure out what I can eat camp and I've kept a log for at least a year and a half. I've never really been in remission but I've had some worse periods of flaring than others, sometimes in the same day!
I can eat something one day and it's ok and have it a week later and I'm not. Sometimes chicken is ok, othertimes not. Same goes for beef (I only eat at least 90% lean, and preferably leaner). And nuts, or nut butter... sometimes they're no problem but other times they seem to cause problems. The hardest thing for me to figure out is how to get enough nutrition like iron, since I tend toward anemia, and protein.
I pretty much avoid fat and grease, spicy and scratchy.
Some of my staples are bananas, baked potatoes with that I Can't Believe It's Not Butter spray stuff, pepperidge farm fish, and eggs seem to usually be ok. Cooked carrots and I think squash are ok for me. This one is kind of weird, but I also seem to be ok with Puffcorn (I think the brand is $2.00 Only!), either cheese or regular. I can almost convince myself that the regular is popcorn.
For a drink that helps with electrolytes, I like Vitamin Water and Powerade better than Gatorade. At least they have vitamins in them.
I agree with eating small amounts at a time.
Potato... Female, 59, dx 11/07 mild left sided ulcerative colitis (50 cm), 10/09 condition has "considerable worsened" (per my GI) to panulcerativecolitis
Currently on Pred 5 mg, Asacol 3 3x a day,
Imuran 150 mg (off until liver function is normal)
primadophilus reuteri, children's Centrum, slow FE
omeprazole 2xday, oxazepam when needed, lomotil
Tried: Colazol, Hydrocortisone enemas, Rowasa, spinach and sunflower diet (helped but didn't get me in remission)
