Your observation of 'pot luck' is unfortunately spot on. I think most UC sufferers ask the same question when diagnosed - what can I eat!!
With trial and error (keep a food diary), after time, you can start spotting foods that cause problems. If nothing much changes, then it can be a process of elimination to see if anything helps.
As for me - I stopped eating all dairy which drastically cut down the amount of mucus. Peas, runner beans, mushrooms cause painful bloating. Baked beans, cereals, wholegrain bread cause bleeding. Carbonated drinks cause cramping, bubbling, diarrhea.
I currently eat wheat free bread and gluten free food products where possible. Also, no processed foods. However, so far there's no evidence that this has helped although UC seems to take a few weeks to respond for me.
