I believe I also suffer from this oral allergy syndrome. I already found out I have some pretty serious gluten intolerance. I believe I have narrowed it down with a food diary to red onion or apples. I will be testing both soon. For me, I get intensely chapped and painful lips within seconds of eating. It's hard to describe, it's like a cross between chapped and ulcerated lips, as if you pressed your lips against battery acid or something. Needless to say, it must be related to the UC.
I was reading about OAS and the theory apparently is that the body misidentifies proteins from the raw fruits/veggies/other food, and somehow relates them to pollen. So, once again, just like I brought up in a recent thread by InSoFla regarding amino acids, I am looking at why my body is constantly misidentifying proteins - in this case gluten and apparently raw fruit/veggies.
I do know that regular doctors think this type of talk is nonsense, but I know from personal experience the symptom improvement that is possible by looking into food allergies/sensitivity and their relationship to UC. It seems that there are more people posting in here now who have had some outstanding results by taking the step of thinking for themselves and not simply relying on the pill-pushing doctors (pharma salesman).
