This is interesting,just search google for Resolvin E1, lots of interesting studies on inflammation including UC.
The resolvin is made in your body from fish oils. Cox-2 inhibitiors such as any NSAID except for Aspirin inhibit its production. In fact aspirin up regulates it.
Anyhow what I am trying to do now with diet is to lower/eliminate linoleic acid from all veggie oils, and eat more fish,plus fish oil pills. There may be other molecules in fish that are anti inflammatory besides EPA/DHA so just taking pills may not be enough. After a few weeks of going down this research path, it seems you must lower the omega 6/omega 3 ratio to no more than say 4/1 as opposed to 20-25/1 in the american diet. Use olive or coconut oil,grass fed butter. Will also switch to grass fed milk,and beef hopefullly.
I was loooking at the label on a cupcake package,two cupcakes 10 grams of fat from, canola,soybean,corn.
You may also look at pubmed,colitis and fish oil.
Perhaps the reason that the research docs cannot find the answer to colitis is that all populations where there is a high incidence of colitis, are eating the same type of foods,just swimming in veggie oils.
There is also good association that heart disease and cancer,possibly even kidney disease are caused by too much veggie oil in the diet.

This guy researchs mostly heart disease,but it seems to me it all ties together. You may have to page back a few years but there are many posts on what changed in our diets from say 1850 on. If you read all of the many articles you may gain insite on what is killing us.
