I stay on Paleo, because I know it helps reduce inflammation since it is an anti-inflammatory diet. And don't forget most disease (cancer, heart disease, arthritis, etc...) is a result of inflammation, so I've made the decision as a lifestyle to reduce inflammation and reduce possible outcomes for future diseases.
I stay on Paleo probably 98% of the time, the 2% of the time being alloted to "cheating", which I've written posts about - with the helpful Gluten Relief.
Personally, I prefer Paleo to SCD - finding it more filling, easier on the gut and colon.
But other than occasional "cheating" with grains, I would not make grains a part of my diet because IMO they are so unhealthy for IBDers and others as well.
You could substitute potatoes - regular ones and sweet potatoes - for carbs, no?
As far as LDN, I would definitely think it would be worth it for you to try it.
