Go to someone else. Just because you butted heads with one doctor, doesn't mean you're forever without one. Go on a few consults and find someone who is equipped to help. Either a GI with experience with j-pouches or a colorectal surgeon. I'd probably try for a surgeon myself. You really just need to find someone who can take a look and prescribe meds.
Have you ever tried setting an alarm for 2am or 3am, or whatever time, to attempt to figure out when it happens and go to the bathroom in advance? That's what I would do.
