It's not just that.. Also, wheat and corn I believe are bred with bt toxin in their genes now.. Roundup is embedded in them. That certainly changes their structure. I'm all for traditional grain prep, but think it's part of the story.
Teff doesn't have wheat and I like adding it to my gf baking mixes for moisture instead of starches.

I think people have got to wrap their mind around the diet as a way of life leading them back to normal. I truly believe we should be able to get back to normal most of the time.. I do not know about things like wheat and dairy. They are very hard proteins to digest for healthy stomachs.. so a decade of UC and I dont know... I like to think I can get them both back with supplementation. DPPIV, Amylase, Acidopholis, Lactase.. worst case... and maybe I can actually repopulate whatever flora Ive killed off and not need the supplements.. but Ill consider myself cured if I can occasionally eat a piece of pizza without effect. Im actually grateful the perspective this disease has given me on food. I ate alot of non nutritive crap and very poorly in balance with my body's needs for many years. Largely due to not knowing better and also because food was my reward or something I could satisfy myself with when nothing else in my life was satisfying.
My lowest point was Nov 11. I was 182 lbs, only 4 lbs higher then my pre pregnancy weight. I was "fat" my whole life. Didnt matter that I usually only ate one meal a day. I dropped 25 lbs in a month but gained a ton of inflammation. I couldnt tolerate anything, it didnt matter what I ate, it was all the same.

I had tried the drugs, tried the surgeries.. but this time I was nursing a baby. Id already had to take antibiotics (and my baby) because of fever during labor..(which is a whole other story... I ran a low grade fever for YEARS and nobody thought it mattered. but 99.8 during labor and a VBAC homebirth transfer? you get the full meal deal) my daughter reacted to my breast milk starting at 3 months. I cut everything but just a lil dairy, just a lil wheat.. she was OK.. but I was not. Baby was still reacting to things like onions, cruciferious vegetables, but not as bad... she was never bad enough for the doctors to worry. Only me. Only someone with a lifetime of hurting tummy knowledge can understand why I worried about her even as she stayed steady on the growth charts.. They wanted me to give her Zantac or another PPI. I choose to supplement with probiotics and stay on a strict elimination diet
I got sicker and sicker.. she thrived. Gotta love God's design. She took everything good that I had and I was glad to give it (she probably got some of the bad too.. but its the chance you take.. what do you do when your baby cant tolerate any formula? You nurse if you can.)
I was finally so sick that for New Years 2012 (at 169 lbs) I said enough and completely got **** on my food and cut out all wheat and dairy fanatically..I had to go to the ER due to a delayed anaphalycic episode from cleaning out all my wheat. I baked bread daily, bought wheat but the 25 lb bag.. so there were lots of different flours and lots of flour dust in my pantry. about 7-10 days later I felt alot better.. but the damage was so bad I needed more so 3 months later I went low fodmaps. That helped alot.. but I was still ping ponging around on what supplements and things I could do because I was nursing.
Anyway, I think I had developed SIBO from the antibiotics and unleashed some stealth pathogens and parasites.. so the intolerances have gone away for me as Ive gotten better.
When I got sick I was in the process of developing a vegetarian faux meat product made of Vital wheat gluten primarily. I had literally met with the forager for Whole Foods and was working out co packing details when I ate one test sandwich too many and woke up covered in hives at 7 months pregnant. My Immune response switched on and it was fierce, I think, because it had to be when my immune system was already suppressed by pregnancy. I stopped eating gluten for the rest of my pregnancy but then in the post partum .. you know, people bring you food.. you dont wanna be picky, your stomach hurts anyway, so whatever... and it all blew up at 3-4 months after I finished the antibiotics. It wasnt CDiff.. but the docs seemed so inept I just couldnt deal with it. I just wanted to take myself and my baby home and heal us. **** this differential diagnosis, "look this way, maybe its this", "wean so you can take this for a reason we cant even explain"..
At the height I was on a mono diet. I could tolerate broths, squashes, well cooked poultry and that was about it. I got allergy tested soon after and reacted to a ridiculous amout of things atleast moderately. Corn, Soy, milk, wheat, onions, sesame, macadamia nuts, tomatoes, citrus, nightshades, eggs. Sorguhm, quinoa, tapioca.
When I cut all the foods I lost rapid weight, everyone worried, but my joints didnt hurt anymore.. my muscles didnt ache.. I had formed stool, 1-2x a day, no urgency.. I kept track of my calories keeping them at 2300-2600 a day religiously.. I still dropped weight. Now I realize how much inflammation I was carrying around. My stomach looks so much different now at 122lbs I havent been 122lb since I was 12. Its so frustrating because Im better, but my guts just are not recovering as quickly as I would really like them to and I think I know the reasons now.. but it is so so slow. Especially naturally. I wish I knew 2 years ago, 10 years ago, what I know now. Im mad Doctors didnt know.
Beyond the things on the test I couldnt tolerate even the slightest amount of spices. I drink Siracha and Cholula so this was like death to me.
Now my only lasting issues that I wont be testing anytime soon are dairy and wheat. Ill test dairy in a year. I also do not miss wheat and can tolerate alternative flours again. I think that I was reacting to them because alot of my reactions are things I ate alot of and since my gut was so damaged it was just labelling everyone as a bad guy.
