SCD bread/loaf/toast recipes?

I didn't know where to ask, but I think I could ask here since the specific carb diet is popular here.

Do any of you have and recipes or links for bread/loaf/toast?

I tried to make banana bread/cake SCD way from a site with the following recipe
Ingredients
3 cups almond flour
1/2 cup honey
3 eggs
2 mashed bananas
1/2 teaspoon baking soda
1/4 teaspoon salt

When it was hot out of the oven it was nice but as it cooled it tasted pretty yuck. Really strong almond and honey flavor and dense.The almond flour I used was labelled as almond meal. Maybe it gives it a different taste?

I was wondering if you guys have any recipes for breads that almost taste the same as wheatbread.
I was thinking of making a coconut flour type bread as I like coconut flavor, but any advice would be much appreciated.

Years ago, when I was on the SCD plan, I made a wonderful pecan bread. I'm quite sure I got the recipe out of the book as this was pre-internet days. I don't think it had banana in it but it must have had a bit of honey? I made my own pecan flour; I didn't like almonds back then.
Sorry I can't be of more help, try experimenting with the recipe.

I love, love, love the recipe called "Tim's Quick Bread." So fast and delicious, it's made in the microwave. I'm unable to find the recipe online, but if you're interested, I could retype it for you when I get home.

The best one I have tried is "Lois Lang's Luscious Bread." It is in the recipe section of the book, Breaking the Vicious Cycle. It uses Farmers Cottage Cheese so that it doesn't have such a strong nut flavor. It is good warm, right out of the oven or at a cool temperature. Thankfully, there isn't any honey in the recipe. We have been doing SCD for about 3 weeks now and I am so sick of the taste of honey that I get nauseous just thinking about it.

I have been doing a lot of baking with almond flour. What I have found is that you need to use a very fine almond flour or you get a gritty texture. My favorite one is the almond flour from Honeyville (online). I don't think that Bob's Red Mill is very good.

Believe it or not, I have found that my three boys like the almond flour bread and muffins better than I do. So far, this is the only bread I have made that I think tastes pretty good. I also think the muffin recipe in the book is good.

Is it just me or does ever SCD recipe taste like crap? The pictures on the sites look delicious, how ever when I make them they look nothing like the pictures and it and taste yuck.

I tried
banana almond bread - Yuck
Coconut bread -Yuck, Unbelievably sweet and dense.
Ginger Snaps - Yuck, Although I burnt them it tasted like I was eating spices etc
Coconut maroons - Decent yet can only eat one at a time.

Are there any recipes that are honestly yummy? I'm thinking of making some thing with blue berries to overpower the tastes.

Im basically living of bananas, eggs, avocados, cashews and meat.

I need atleast 1800 calories per day to yet only getting approx 1600 below

For a very simple recipe try the following. Easily scales as well.

1 cup almond butter
2 eggs
1 cup DCCC
1/2 tsp baking soda
1/2 tsp salt

Mix ingredients and place in greased bread pan.
Bake at 350F for 60 min.

The bread tastes a lot better if you do the intro diet for 2 - 5 days, then slowly reintroduce foods. By the time I was able to eat almond flour, after two weeks of chicken soup and boiled veggies, I thought I'd eat it straight from the bag! That's why there are so many stories of people overdoing muffins :)

Comfy tummy.com has recipes I found useful.

Instead of the websites, go get these two cookbooks asap... They'll literally change your life! lol... Actually the recipes are soooo good that my non SCD relatives all borrow and cook from them as well.

Also - the Banana and the Carrot muffin/loaf recipes are awesome and taste better than wheat muffins in some ways. Here's a little tip for muffins and loafs that I came up with. I make either Banana or Carrot spice muffins:

To do so add the following:

1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/2 teaspoon pure vanilla extract

Add this to the eggs, then mix everything extra good. Pour your batter in and sprinkle a little cinnamon on top as well as say a couple of pecans.

The smell in your kitchen will be awesome as well!

She also sells SCD granola, muffin mixes and almond flour which is out of this world kinda good...

And Susan is right - The "fineness" of the almond flour is everything. That's why I get it from Jodi on the link above. She grinds it so it almost like flour. Works perfect for loaves, crepes and so on without that "gritty" taste common to most other almond flour.

Ricki, ive been gaining steadily and one of my favorite recipes is called a cup of fat. Its not baked but its hard to not gain when you eat it haha

Its 1/4 cup almond butter (or other nut butter you like), 1/4 cup coconut oil, 1/4 cup coconut butter, and 1/4 cup shredded coconut for texture. If you want it smooth, leave out the shredded coconut. I mix it up in a bowl and thats it. ive been throwing this back daily since going low carb and i love it. It probably has 1000 calories so scale it down if you need to.

I used to make the peanut butter cookies and "monster cookies" from the original Breaking the Vicious Cycle book and my non-IBD relatives would have a fit over them. So, no… I wouldn't say all SCD recipes taste bad.

Ok, so I planned out my daily food/calorie intake and here it is.

3 eggs 225cal +vege 20 cal, = 245 cal 0
50grams cashews 292 cal Fiber 1.44
Banna/pear/apple daily 105calx3 = 315cal 12g fiber
Avacado x1 = 250 cal 2.8g fiber
2 teaspon of organic/natural peanut/almond butter. 180 cal
150g lean meat appox 200cals
Vege's dinner = approx 50cal
100% natural Fruit Juice 200mlx3 =330cal
Serving of dried apricots = 55cal 5g fiber
1917 calories
21g fiber.


I have a concern. I bought some peanut and almond butter. The ingredients say Almonds/peanuts and Organic Sea Salt. On the label it says the nuts have been slightly roasted. If the roasting involved another ingredient such as a starch would it be labelled under the ingredients?
As well is 21g of fiber too much for someone with colitis under remission? Considering they recommend you to consume 24-35g for males?

This is my signature banana bread:

4 eggs
2 tbs baking soda
1 tbs salt
1 cup almond flour
3/4 cup almond butter
2-3 bananas ripened and mashed

mix it all up, grease a pan with coconut oil,about 325 for 1 hour....

It is the best baked thing we've ever made, including everything before the UC days :)

We go a bit heavier on the spices and we also put about a cup and a half of raisins in.
