For me, I have accepted not eating certain foods as long as eating a restricted diet makes me feel better, which is currently the case. I'm currently not eating any grains, dairy, nightshades, eggs, or having any alcohol. I also am making everything from scratch and will not eat something that has any perservatives, if I don't know what all the ingredients are, I don't eat. I'm making my own almond and coconut milk and drinking bone broth. It sounds extreme but that coupled with a lot of the herbal remedies I'm currently taking (see bio) have made me just about
reach remission, I think CCHerbal was the the last kicker to do so which I started just this week.
I do miss a lot of foods but there are some more healthy alternatives. For something crunchy, I make kale chips which takes 2 minutes of prep and cook for about
20 min in the oven and you get that feeling of having potato chips but it's so much healthier. I splurge on good grass fed meat and exotic fruits and vegetables and that takes away missing greasy pizza which never made me feel good in the first place, UC or not.
My plan is to slowly try and re-introduce a few things one at a time into my diet to see if I can tolerate them again, I'll start with eggs then wine
I've posted about
this before, but a really good cookbook that just came out from someone who also suffers from UC is called Against All Grain. It's definitely worth picking up or at the very least chekcking out her blog as she has some really inventive ways to make some comfort foods without the ingrendients like dairy and gluten which can be triggers. Once I start eggs again (I hope they work) there are some really awesome baked recipes in there I can't wait to try! She also has an oat-free granola in there I've made a few times which is really delicious since you miss granola.
Yes, it may be time consuming and restrictive to cut things out of your diet, but I'll do ANYTHING to feel better, and yes, that means drinking crazy bone broth every day. Something I didn't think I had in me. Good luck!
