It's certainly possible to have something set off a mini-flare. The trick is to get in front of it ASAP and beat it into submission so it doesn't grow into a bigger one. If you have mesalamine enemas on hand, they might be helpful in getting you better coverage than the canasa. I'd also dial back any potential dietary irritants like lactose, raw veggies or fruit, high sugar or processed foods.
The Mexican food might have done it - certainly salsa can be off, or the beans can be too much for you, or the pumped up salt & fat can irritate things. I've had some issues arise from the onset of a virus (like a cold).
