I ate according to this diet for many years and was still following it when I was diagnosed with UC. I think it's a fine diet for overall health, but most people with IBD can't tolerate as much fiber as you need to eat to be successful on it. You also need to eat a large amount of fat in order to get enough calories, which is again a problem for a sensitive GI tract. I don't remember where you're at in terms of disease activity (e.g. remission or not) -- if you're in a solid remission then I'd say go ahead, but take it easy with the fiber for the first few weeks.
