I haven't ate steak or mashed potatoes since I was diagnosed with uc.
This is a perfect example of the insanity of following some kind of UC diet without any proof of the need to do it. I'd be willing to bet that all of these years you could have been doing this but you thought that it would be bad for you when, in reality, it would have been good for you. I hate to see so many people on this forum eliminating so many foods from their diets with absolutely no justification.
I too always had better UC days on steak eating days. Many have found a Paleo diet to be helpful. Potatoes have never usually bothered me unless they contained cheddar cheese. I have a histamine intolerance (many UC'rs are low on the digestive enzyme DAO, which helps eliminate excess dietary histamines) and any high histamine foods (such as aged cheeses, lasagna, and other things) would always make my UC worse. Since taking the digestive enzyme DAO before meals I can now eat these things with no problems. You may want to check into the histamine intolerance thing yourself. Congratulations on the big win!
