I do think you should think carefully before changing things as it sounds like you are doing well...do think carefully. What I have learned is that doctors aren't always that good at what they do, they are human, and when you meet a GI that gives you their time, that is refreshing, great, but it doesn't mean they are right!! I recently saw a well respected holistic doctor, and he advised me to cut out all animal proteins, including all dairy products. I have sulfite intolerance, which in itself is a challenge, with multiple food intolerance and allergies, and on top of that I can't eat fish, shellfish, soy, wheat, nuts, tree nuts, and the only thing my body does well with is meat. So on reflection, I decided to listen to myself and continued to eat meat, as I believe if I had followed his diet I would be even worse off now.
