Try eating protein (chicken, beef, pork) and a well cooked vegetable (carrots, spinach, peas, green beans) and a potato.This is my basic meal plan when flaring.
For the rest of the food you will need to test things out to see if they create discomfort (gas, bloating) or bleeding (for me this is fibrous stuff like nuts/nut butters, oatmeal, gluten products and anything scratchy like chips). Urgency is related to how inflamed your colon is and that takes some time to get lowered. Won't happen overnight but stay away from caffeine and try to keep sugar down to a minimum. Some of us are sensitive to additives like citric acid, carrageenan, anything ending in -ol which is a sugar alcohol like sorbitol, etc.
There are a lot of cookbook for people with food intolerances. I'll look up some titles and you can look in your local library. I used to be way more lactose intolerant but as my gut healed I can now eat more dairy products with no harm. So don't think you can "never eat X-food again" because maybe you can later on.
