I second the Vega protein, as it is vegan, gluten-free (and I think no soy). The dairy-based (whey) proteins tend to speed up my bathroom trips, but I am a bit sensitive to lactose.
As for peanut butter -- just take a look at the labels. You want one that is nothing but peanut butter and salt. The oil will separate in these because there is no powdered sugar or other additive keeping it mixed, but I find if I give it a big mix when I first use it and then store it upside down in the fridge (must refrigerate after opening), it stays mixed. There are a number of natural/organic brands. I really like the Trader Joes one if they are near you. Otherwise, I just buy the one that is the cheapest with just the two ingredients -- they all taste the same. Smooth is probably easier to digest than crunchy, but I love me some crunchy.
You can also do a handful of nuts for a snack. I also like Luna Bars. But mostly, try adding more lean protein and complex carbs to your diet.
