I think your GI is trying the right options. If imuran and asacol aren't working, and prednisone left you with a lot of problems making it an unattractive options, most people would probably move on to biologics.
Have you had stool tests? Have you considered uceris? Are you using rectal meds?
I don't put too much hope in supplements, but others have luck with them, and also diet. I can understand not wanting to try remicade since it's got some similarities to humira, but perhaps you could try entyvio or xeljanz.
Before rushing up the med ladder, you should get the levels tested for your imuran, and try adding rectals, also stool tests are imperative. Have you been scoped to see where the activity is happening? it's possible it's extended further than your past involvement.
Somewhat controlled is okay, but it's not what we aim for, we really aim to be in remission so we can reduce the cancer risk. At 10 years, the risk is higher, and scopes should be more frequent.
