To me, it sounds like you are doing great, and in a remission. I believe your anxiety is running away a bit and making you worry. A remission doesn't mean 100% perfect poops, all of the time, and it doesn't exclude stomach upset or gassiness. 1-2 bms a day that are non-urgent, and solid-ish is most likely a remission (assuming no blood). Expect a lot of variation within your stools even within a remission, I say some type of solid, as that's what I've got during remissions some are normal looking, some are a whole lot softer, and others are somewhere in between those. In a remission, I can poop once a day, sometimes twice, even the odd three on an occasional bad day, and even occasionally skip a day and not poop at all. That's all typical and normal for a remission for us. If you want more consistency, then take a daily metamucil fiber supplement and that reduces some of the variation, a bit.
Before you had UC, you never looked or cared about
the firmness of your stool, and you did not think it was odd to occasionally poop twice in a day. My dear wife does not have any bowel illness, and she poops twice a day on occasion, and sometimes has loose stools randomly too (I always make a point to her that she pooped twice as much as me that day, when she does!).
