Why only veggies? Cooking until very soft.

Unfortunately cooking, blending, or pureeing does not reduce the fiber content of foods.
Juicing does, as it strains the liquid from the pulp (most high speed juicers.)

However cooking does lessen the residue, which is the amount of food that reaches the colon (as it makes it easier to digest along the way.) Residue can also be a problem for sore guts, along with fiber.

Remove seeds and skins, and stick to low fiber vegetables (pumpkin, potato, squash) to limit fiber.

But if you can, this should be a short term diet - though some are forced to keep it for quite a while.

I echo what the other people say. I’ve been working on upping my fruit and veggie intake because since I was diagnosed two years ago I have had less diversity in my diet because I was afraid of certain foods causing painful episodes. Here’s what I do now that works for me:

I prep veggies in advance, have them in the fridge and just eat a little bit of foods that I’m worried about. Even two lettuce leaves count or a TBS of mashed turnip. Take the stems and stalks off veggies like kale or spinach, over-cook veggies, make “baby food” purées with veggies, add grated or mashed veggies to soups and breads like oat bread or banana bread. Make zucchini bread and carrot cake, blueberries and honey on my oatmeal, some oatmeal as a side dish (like oat risotto) with the vegetable (I find bulky foods with a vegetable sometimes helps), chew well. Add fresh or dried spices liberally.

I think my worst moments were those times in the past where I overate a veggie for example, I had bok choy that was so delicious at a restaurant once and it was so delicious! I ate too much (maybe too fast) and ended up writhing in pain for hours that night.
