best of luck starting with SCD. It helps to have support, here or your family.
It will be hard with kids watching them eat something you can't, unless they are too young to demand stuff lol.
My spouse has been behind my diet the whole way but he's a healthy eater anyway. If he wants pasta it doesn't bother me at all and he keeps the chocolate in a "secure"
location because I cannot be trusted (my words).
Having to ask him for a piece keeps my consumption to a bare minimum. That's the "accountability" you mentioned.
I've been the main cook in the family in the last couple of years which makes it easier to get the SCD meals I need.
Then I can just add non-SCD things for his plate. But he's actually been happy with the meat and veg., no starch.
Keep a diary/journal/blog whatever. Helps you remember what happened, memory is often very wrong. Improvement is often very baby-steps that you only see when you look back and see how your UC was in the past.
SCD has given me my life back but it is very hard in the beginning to adjust to the diet. It takes a mighty will and/or desperation. I have both but some people call the first one "hard-headed".
The good thing about
the pecanbread site being geared toward kids is the desserts. I am PRO-dessert, love any and all dessert recipes.

In remission April 2010 after 10 years of suffering and no remission ever
Jan 2010 started SCD diet (modified to remove dairy, fruit & juices)
Gluten-free=bleeding stopped in 3 days, 95% remission in 5.5 months on SCD
Diet: Gluten/grain-free, fructose-free (blueberries OK) starch-free
SCD diet: Protein(meat/fish/eggs,no soy), nuts(soaked/roasted), non-starch veggies, nut-flour muffins
Daily: tsp. fish oil, Vit D3 2000 2Xday with oil/fat, veggie juice, sunflower seeds, VSL#3, (6) Citrucel
homemade yogurt, milk products and some fruit OK at 5.5 month remission
Highly recommend: the book "Life without Bread" and the Specific Carbohydrate Diet
Rx: (6) balsalazide daily, meslamine enema occasionally
