just checking in with everyone see how you guys are doing - sorry ihavent been around much - i suprised my mom by flying into florida for mothers day and then i caught a stomach bug which has had me home this week - upset the gerd and vertigo so traveling and working are a no go
i wanted to pass one of my favorite reciepes to you guys - i created it myself!
stuffed shells with butternut squash and pumpking butter(optional)
cook the pasta until al dente - cook the squash as usual (halfed and gutted- with some unsalted butter) - once the squash is done scoop out into a bowl and add pumpkin butter(this is not sold in all stores so if you dont have it dont worry) then stuff the shells
you might want to make a small pot of chicken stock (unsalted chicken bullion packets and some water) to add in the squash mixture and on top of the pasta once all together
put in oven for about 5-10 min or so on 350 and your all set!
