Thanks, Tandem Rider. I was trying to find recipes for meatless sauces, but everything had melted cheese. I finally decided to just melt ricotta cheese in some pasta with cooked veggies to start. That should be safe. The boxed pasta with sauce is a good idea, though! Not sure about tofu, but I will give it a try.
It is challenging trying to find something that fits within our diet. I, too, am using the diet downloaded from the website.
