Hello,
I am having issues with my hands and eyes swelling as a result of or so I believe a gluten and salt issue. I would like to know if there r others out there experiencing this. I have met one person in my home town with the same issues. Eating has become the enemy because I can get away from the gluten but not the sodium. I eat no salt added foods. have learned to cook extensively with herbs but it is just so boring. If anyone else has this issue I would like to hear how u are handeling it .  Thanks mad

My mother had to be on a salt-free diet for many years. If you learn to use only the right spice for each food it helps. If you use a bunch of mixed spices your food will taste all the same. It does take a lot of getting used to. Beef still needs a little salt, maybe pork too, but I don't eat that. I still avoid salt. Do you have a condition that your doctor says requires low salt?

Gluten is the catch word of today. Not everyone is truly gluten intolerant. There are at least 100 different glutens. A lot of people become wheat intolerant or even allergic as they age.

Have you had any testing? The biopsy is the only accurate test for sprue (celiac), and like the other tests, you have to be eating gluten for it to be positive. You could have a scratch test for wheat allergy.

Consider consulting a Naturopathic physician, as they are more well trained in issues such as this.

Gluten can trigger symptoms that can't be predicted on a regular Celiac or allergy test...this is known as Non-Celiac Gluten Sensitivity. Enterolab.com has the best test for this, but even it isn't 100%. The only way to know for sure if gluten is a problem is to avoid it for at least 6 months, then try eating gluten again and see if you notice any symptoms.
