Is this an allergic reaction?

I've been having these symptoms for quite a while. At first, I assumed that they were panic attacks, but after a while I noticed some patterns. My symptoms include:
-No being able to breathe
-Difficultly swallowing (maybe my throat swelled/airways closed?)
-Tight facial muscles (my jaw muscles especially)
-Abdominal pain
-Feeling very hot
-Feeling nauseous/awful
These usually go away after 5 or so minutes, by themselves. The reason I suspect some form of allergy is that these always happen when I chewing mint gum. Spearmint, usually. Not the weakly flavored mint gum. It also happened when I was eating a Frootie. This is odd, since I had the same flavored Frootie from the same bag the next day, but no symptoms appeared.
These really mess up my day, and I'd like to find out what's causing this. Please reply smile

Hi, Mint is very high in Salicylates and as this is happening with mint gum, you may have a problem with Salicylates. I am severely Salicylate intolerant which means I react to most fruits and vegetables which all contain salicylates in varying degrees of intensity. A lot of foods contain Salicylates as well. I suggest you look online as there is a lot of information out there on salicylates and that might help you to determine whether it is that or not.

You could try drinking a cup of strong tea and seeing how you react afterwards as this usually causes a reaction for most people that are salicylate intolerant as tea is very high.

Do you sometimes feel like you need to sleep after eating? That sometimes happens as well.

It is worth keep a food diary for a couple of weeks, as you really need to pinpoint this as it is effecting your breathing. I
Stopped smoking Jan 2013. Diagnosed Left sided UC, 8th Feb 2014.
Gluten, Dairy, Sulfite, Salicylate, and Histamine intolerant.
Home FMT treatment in July 2016 to ward off reoccurrence of C DIfficile.
Failed Pentasa, Azathioprine and finally Methotextrate due to allergies/intolerance. Taking Humira, and now down to 10g of Prednisone and reducing each week.
