Hi missy,
What a wonderful thing you are doing for your mom. I suggest making something that is not greasy, fried, too acidic (i.e. tomato based), or too fatty (cream based). It's tough, I know. Sorry. The safest is fish, chicken and turkey. Can you make a grilled/baked chicken? Maybe with some WELL cooked veggies and mashed potatoes (no gravy). Pork chops always sit well with me too.
Good luck!

If dinner's not going to be a surprise, just ask your mom what she can handle. There are lots of triggers out there and they're not always the same for everyone. For instance I can have dairy, including ice cream, but that's horrible for a lot of people. I can't have caffeine and some people can.
The worst offenders--those things that bother most IBSers on this board--are caffeine, carbonation, coffee, artifical sugars--especially sugar alcohols, apples and apple products, alcohol, raw vegetables, high fat, and greasy or fried foods.
You might try a stir-fry with chicken or fish and choose softer vegetables, like baby corns, onions, snap peas and water chestnuts, to put in it (rather than harder-to-digest broccoli and bell peppers) and serve over white rice. Egg drop soup shouldn't be too bad as a side. Dessert should be small and non-dairy.

The white foods are usually safe for many (rice, chicken, turkey, potatoes, etc.). I also agree with the not fatty stuff and nothing too gassy like beans or green veggies. That is such a sweet thing to do for your mother. :)

Something which also might trigger your mom's irritable bowel is the form of food. i.e. I can eat cauliflower but not broccoli-it comes apart and gives me raging stools. Ask her, if she's had this for long she can tell you if this is a trigger for here. Dinner is a very nice idea and doable with the thought you are giving it. Good luck, chesswoman
