Doing a little baking.....

I am up to doing some baking for my co-workers.  They miss my goodies.  I did a little yesterday and a little today.  I don't want to over do it all at once.  I started baking on the side for sale a few months before my diagnosis.  I've done it off and on for my previous co-workers.  I've always dreamed of opening a bakery!  I just love making things that people like!  Right after I left my last job, I did a LOT of baking for Thanksgiving and got way over my head, but I pulled it off.  It was tough!  I'm hoping this will be therapeutic for my recovery.

I'm impressed. I just made a small cake with no carbs that was supposed to be beaten for 6 minutes. well, I didn't feel like it. I just wanted the chocolate. So, it is about 1/4 in high - but it is chocolate.

Oh!  Baking!  So so so therapeutic!   I really relate!  I love to bake and get really into it.  I hear ya.  Hope all is well.  Been reading your posts.  keep you chin up!

Sure wish I knew what it is about baking that seems to make people so happy with the world. I drive myself nuts. I will go head to head with anyone in cooking, but baking I would embarrass myself. My mother was the baker in the family. She could make a pie dough so flakey, you could actually almost lift see through layers of the dough. Mine has been known to break a knife. Could that be why I do not find any peace with a rolling pin? As Ellen said keep your chin up but if you bake like I do you probably have a great big old smudge of flour on it. L&H Joyce
